Other: thickening gravy or chili, breading meat or vegetables, making gnocchi-like masa dumplings. It can also be used the same way you would use a cornmeal. Review: Very finely ground - This is a truly finely ground masa harina / corn flour. Eating nixtamalized corn helps me with one of my medical conditions, and instead of using corn starch (which doesn't help my condition at all), I like to mix masa harina into an egg custard / homemade pudding for the thickening agent. Most masa harina leaves the texture rather grainy and less than pleasant because it's coarsely ground. This flour is wonderfully fine and produces the smoothest non-corn-starch texture I've yet to find. I haven't made tortillas or polenta with it yet, but I am going to be buying a lot more and will have enough left over to experiment!
