Can you tell me what kind of wood is this?

This is acacia wood, it's magnetic, the interior of the wood is magnetic block.

What are the dimensions of the knife holder?

The knife holder's size is 16*2.5*0.7 Inch , which can put up to 9pcs knives.

I don't want to punch holes in the wall, is it possible to stick it to the wall with tape?

It is an option, depending on the wall construction type. Suitable surfaces: wood board/glass/mirror/metal/marble/ceramic tile.

Which installation method you would suggest?

Screw mounting will be recommend than adhesive mounting due to the moisture in a kitchen and frequent removal of knives.

Is there anything to pay attention to if i choose No Drilling option?

The double-sided tape is suitable for smooth and stain-free walls (Not paints, parget, plaster, wallpaper).
