What is the difference between the top bearing bit, and the top & bottom bearing bit? both look identical excpet for the price.

It's the placement of the bearing. Top bearing has a bearing on the shank. Bottom bearing has it at the end and top and bottom has bearings in both places.

Can this bit take a full pass 7/8” by 1 1/8” in southern pine, or hardwood? Should it be used at higher speeds or lower speeds?

I have used it with elm and white oak to good effect. I take multiple shallow passes, And typically trim close to the template line with my bandsaw before routing. These bits are under 1” diameter at the cutter, so can be run at high speeds. Take it easy and check your results as you go.
